let's talk breakfast: toast 3 ways

So here's part two of my Sunday morning breakfast series "Let's Talk Breakfast!" This week, toast three ways. Toast is a breakfast tradition, but let's be real and forget about toast + butter (unless 1. you're hungover or 2. you're going for an easy out-the-door hunger fix). These three are lot more nutritious, filling and tasty.

One: Dressed Up Peanut Butter Toast

INGREDIENTS:
- bread of your choice, mine is whole wheat
- chunky peanut butter (or smooth)... or almond butter!
- honey
- sliced fruit of your choice, mine is plums

INSTRUCTIONS:
1. Toast your bread.
2. Spread about a tablespoon of peanut butter across the piece of toast.
3. Drizzle about a teaspoon of honey on top and smooth evenly with a knife.
4. Thinly slice your fruit. I wanted to do something other than the popular banana, and the contrast of the sweet peanut butter with a semi-sweet/semi-tart plum was fantastic. (Apples, bananas, peaches would also be great!)
5. Serve with another nutritious snack: oranges, raisins, almonds, walnuts.

Two: Cheese + Jam Toast (I fell in love with this combination in Portugal)

INGREDIENTS:
- bread of your choice, mine is whole wheat
- 1 tbsp spreadable cheese, I used swiss
- 1 tsp chopped basil
- 1/2 tbsp apricot jam (or your jam of choice)

INSTRUCTIONS:
1. Toast your bread.
2. Mix the cheese and basil together in a small bowl.
3. Spread the mixture across the piece of toast.
4. Add the apricot jam. I used apricot, it's sweet and savory - another great option would be pumpkin, blackberry or orange marmalade.
5. Serve with another nutritious snack: oranges, raisins, almonds, walnuts.

Three: Mixed Up Avocado Toast

INGREDIENTS:
- bread of your choice, mine is sourdough
- 1/4 avocado, mashed
- half of one small lemon
- 1 tsp chopped basil
- 6-8 cherry or grape tomatoes
- 1/2 tbsp goat cheese
- sea salt

INSTRUCTIONS:
1. Halve your tomatoes, drizzle with olive oil salt + pepper. Roast them in a 350 degree oven for 15 minutes.
2. Mix the avocado, basil and half of one lemon in a bowl.
3. Toast your bread.
4. Spread the goat cheese and avocado mixture on the piece of toast.
5. Arrange your tomatoes on top.
6. Sprinkle with sea salt.
7. Serve with another nutritious snack: oranges, raisins, almonds, walnuts.


Each of these variations of toast includes omega-3 fatty acids, fiber and tons of nutrients. This is going to keep you fuller for much longer, rather than that plain bread + butter.
